I kid you not, I am eating one of these cupcakes as I write this blogpost. They are delicious. If you're a fan of Biscoff spread or cookies, then you'll be a fan of Spekuloos Spread. My friend recently went to NY and brought me back some Wafels and Dinges Spekuloos spread. Normally you would have some of the spread on top of waffles but I decided to look for a recipe to make them into cupcakes! I ended up making them for my brother for his birthday rather quickly so I didn't stop to do step by step photos.
However, I believe Bree did a fantastic job of the step by step process and this was too good not to share. This is the perfect fall cupcake to have at your Halloween parties so be sure to check it out! Don't have Spekuloo? Use biscoff spread like they did in the original recipe. Also try checking at Trader Joes in your area if you have one.

Biscoff Cupcakes with Biscoff Buttercream
Ingredients
1/4 cup butter, room temperature
1/2 cup Spekuloos spread
1 cup sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups flour
1 1/4 teaspoons baking powder
1/3 cup milk
Spekuloos Buttercream:
1/2 cup butter, room temperature1/4 cup Spekuloos
1 1/2 cups powdered sugar
3 Tablespoons cream
1 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees F.
- Cream together butter, Spekuloos and sugar until light and fluffy. Add eggs and vanilla. Add flour and baking powder. Mix until just combined. Add the milk.
- Line 12 muffin cups with liners. Divide batter evenly into cups.Bake for 17 to 20 minutes. The top will be firm like a cookie, and the inside will be soft like a cake. Cool completely on a cooling rack.
- To make the buttercream, cream together butter and Spekuloos Slowly add powdered sugar. Add cream and vanilla and beat until very light and fluffy. Pipe frosting onto cupcakes and add decorations if you like.
