Cheesy Au Gratin Potatoes

When asked to bring a side dish to a friend's house for a weeknight dinner I of course turned to Pintrest.  I was looking for some sort of potato side (something starchy) to go with the protein and I came across some Cheesy Au Gratin Potatoes by The Farm Girl and they were delicious and easy to make. 


For this reciepe I only wanted to make a 8 x 8 dish versus the 9 x 13 that they made on the original blog, so I modified it a bit.  I also didn't have corn flakes on hand so I used chex mix.  :)

Potatoes
  • 1 1/2 Tbsp butter
  • 1/2 small yellow onion chopped
  • 1/8 cup all purpose flour
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup of milk
  • 1/2 tsp salt
  • 1/4 pepper
  • 1/4 tsp dried thyme
  • 1 cup shredded cheddar cheese
  • 14-16 oz bag of frozen shredded hash brown (I got it on sale for $1 at Safeway!)
  • 1/4 cup safeway
Topping
  • 1 1/2 cup chex mix
  • 1 Tbsp butter melted

 Preheat the oven to 350°F.




Start by melting the butter on low/medium heat in a medium to large sized pot.  Make sure you don't burn your butter!

Brown the onions.

And then mix in the flour.

Next get 3/4 cup of chicken broth.

And I really love this trick - using the same measuring cup pour in enough milk to raise it by 1/2 cup.  It's a fun little math test for the kids.

Pour the milk & chicken broth mixture in with the onions.

Then stir in some salt, pepper and dry thyme.

Melt in your 1 cup of shredded cheddar. (Sorry for the low picture quality, there wasn't enough natural lighting)

Then mix in the frozen shredded has browns.

Mix mix mix. Fold & combine until you have a nice consistency.  

Lastly add in 1/4 cup of sour cream.

In a seperate medium sized mixing bowl butter up the chex mix.  Melt the butter in a small bowl first - I did mine with a microwave safe bowl - and then drizzle it over the chex mix.

Layer your cheesy potatoe mix into the 8x8 pan.  Then sprinkle the chex mix over the top.  Pop it in the oven for 30 minutes or until hot and bubbly around the edges.

Now time to do a sink full of dishes....The reason this isn't a 5 star pin.  Ugh.

Once they're done baking remove from the oven and rest for 10 minutes, then enjoy!  They tasted really good with my friend's pork chops, garlic bread and salad.  Hope you enjoy them as much as I did.
